Since the 1850’s, dating back seven generations with great-great…grandfather and grandmother coming from Switzerland with one Jersey calf, the Marcoots have been raising and milking Jersey cattle. In 2010 sisters Amy and Beth embarked on a new adventure in the legacy of the Marcoot Jersey Farm by creating their first wheels of cheese.


Cave Aged Gouda Cheese is made with Jersey Cow Milk, as all Marcoot Jersey Creamery cheeses are. The extra fattiness of Jersey Cow milk makes cheeses smoother and creamier as compared to average aged Gouda. Deep and complex flavors come forward from the 3 months in Swiss model, man-made aging caves. The cheese has a creamy texture with a mild sweet/salty flavor and a rich, velvety mouthfeel.

Sustainability is a key component for the family and it guides them in all aspects of the business.  Their cheese is made solely from the milk of the family’s own Registered Jersey, primarily grass-fed cattle, which enjoy pasturing on the paddocks in a variety of grasses to provide abundant natural nutrition. No hormones are given to the cattle.
